Wabi Sushi Is Open. Twisted Goat Is on Deck.

If you've driven past 1450 Long Prairie and wondered how long that suite next to Cold Stone was going to sit empty: not anymore. Wabi Sushi opened in May in the space Parlor Doughnuts vacated when it decamped to Dallas at the start of the year. Fast turnaround for a storefront on that stretch. And the replacement is a genuine upgrade in terms of variety.

This is not the Wabi House chain you may have seen in Frisco or Keller, though the names are close enough to cause confusion. Wabi Sushi is an independent spot from chef Dongwhun Lee, who spent years working in Los Angeles before landing here. The menu covers the expected bases — nigiri, rolls, rice bowls, dumplings — but the thing worth trying first is the inari. Those are the sushi pockets: tofu pouches simmered in broth, stuffed with seasoned rice and your choice of topping. Spicy salmon, seared salmon, spicy pork, avocado, and a few others. Handheld and tidy, which means they travel well if you're doing takeout. The Town of Flower Mound confirmed the opening on May 23.

A few miles over on Cross Timbers, Twisted Goat Coffee has been in final prep stages for months. The shop is set for Cross Timbers Village — the center at the southwest corner of FM 1171 and Bruton Orand Boulevard, near Palio's Pizza and Tom Thumb. It's a 1,037-square-foot space, small enough to feel intentional rather than cavernous. Twisted Goat is the Texas debut of a brand tied to Chocolate Fish Coffee Roasters, a California operation out of Sacramento and Folsom. The menu is expected to include specialty roasts and bakery items. No confirmed open date as of this writing — the town's April announcement simply said "coming soon" — so watch their Facebook page for the actual launch.

Taken together, these two matter more than either does alone. Long Prairie and the Cross Timbers corridor have been the town's stated economic development focus, and for a while the pace of new tenants felt more like a trickle. A sushi spot already pulling customers and a coffee roaster days or weeks from opening — that's momentum, or at least the start of it. Whether it holds depends entirely on whether locals show up consistently, not just for opening-week novelty.

The honest stakes: if Wabi Sushi builds a regular lunch crowd and Twisted Goat becomes the non-chain morning stop for people who live in that northwest quadrant, other owners notice. Vacancies fill faster when a corridor has proof of concept. If the traffic doesn't materialize, those storefronts cycle back through the market and the city's pitch to the next prospect gets a little harder to make.
